Ingredients:
- 3 organic lemons
- 1 can of coconut milk (13.5 oz) (full fat preferably)
- ¼ cup maple syrup (can use more if you want it sweeter)
Directions:
- Wash your lemons & cut off the ends
- In a blender, combine your lemons, coconut milk & maple syrup until smooth
- Transfer the mixture to an ice cube tray
- Freeze for 1 - 1 ½ hours
- Place the ice cream cubes back in the blender, blend until creamy
- Serve immediately & ENJOY

My wife and I made this and we also tried it with limes and oranges, all 3 were very good. The only thing we might try next time is to remove the bitter white layer under the peel (we will just zest the fruit instead) so its not so biter and less maple syrup will be needed. We also plan on trying different fruit like kiwi and cherries next time we make some. The maple syrup we buy is from a local farmers market and it is organic as well. Store bought maple syrup may contain high fructose corn syrup and other ad additives so I suggest folks avoid it.
