Today I make a 3 gallon batch of apple wine out of apple juice! Recipe for 1 gallon is below. I used one full packet of champagne yeast, but keep in mind that you can use one packet to ferment 5 gallons of wine! I also gather some materials from Mr. Lucas property, and have a nice chat with the old guy!
Apple Wine
Per gallon
3 qrts apple juice
1 to 1 1/2 lb brown sugar
1/2 cup raisins
1 Tbsp. Lemon juice
1 pkt. Champagne Yeast

Today I make Dilly beans and dewberry jam! I show you the entire process from the recipes, to water bath canning. For your reference here are the recipes. I'll add them to my cookbook once I get the time!
Dewberry Jam Recipe
Makes 2 half pints
1 cup berries
1 cup sugar
1/4 (1.75 oz.) box Sure Jell Pectin (comes out to 1 big heaping Tbsp.)
Place berries in saucepan and mush up a bit. Add pectin. Stir. Bring to a boil on high heat while stirring. Add sugar and stir. Return to boil and boil 1 minute while stirring. Remove from heat. Skim foam if any. Ladle into jars.
Water bath 10 min.
Dilly Beans Recipe
Makes 2 pints
1 lb. Green beans
2 tbsp. Non iodized salt
1 1/4 cup vinegar
1 1/4 cup water
2 garlic cloves divided
1/2 tsp cayenne divided
4 tsp. dill seed
Put vinegar, water, salt into pan, stir. Bring to boil. Reduce to simmer for 10 min.
Trim ends, remove string. Pack green beans into jars. Add 2 tsp. Dill, 1/4 tsp. Cayenne, and 1 clove garlic to each jar. Add brine to jars.
Water bath 10 min.

I haven't made sauerkraut in a really long time, so I got some cabbage, carrots, a sweet onion, and I made some! Recipe below. I've changed it up a little bit from the way that I made it in the beginning. My motto is to keep it simple! But I do love onions and carrots in my kraut!
I also decided to start some wine out of store-bought Apple juice. I found something crazy in my garden.
Ann's Updated Sauerkraut Recipe
2 lbs cabbage
4 tsp. Non iodized salt
Small bag julienne carrots
1 large Vidalia onion
1 large jar (about a gallon)
1 sandwich baggie
Core, shred/chop etc. cabbage. Save one large outer leaf. Chop onion. Throw both in a large bowl, add carrots. Sprinkle 4 tsp. non iodized salt over it all (2 tsp. per pound of cabbage/veggies). Massage for a bit. Let sit until it starts creating brine. Put in jar. Pack down. Add more non chlorinated water if need be. Cover kraut completely with water. Put large cabbage leaf down on top of kraut, and press to submerge. Add more water over top if need be. Place sandwich bag over jar. Fill with water to within an inch of the top of jar. Loosely place lid over top of jar. Let ferment 2 weeks, or as per your taste.

What better way to spend my Mother's Day than making apple butter out of applesauce. I've got an absolute ton of applesauce and this is one of the ways that I use it up. Today I cook it over a campfire, and then water bath can it!
Canned Applesauce Apple Butter
Makes 8 half pints
6 15 oz cans apple sauce
4 tsp cinnamon
1 tsp ginger
1 tsp nutmeg
1/2 tsp groung cloves
2 c white sugar
1 c packed brown sugar
Add everything to a pot. Cook down about 4 hours.
Water bath 10 min.
